45 days. The succulent leaves of White Stem have a mild, swiss chard-like flavor but slightly sweet, tender and delicious. Use in stir-fries with beef, pork, seafood; also good in salads when leaves are young. Drop into soup and simmer just until wilted—essential for wonton soup. Steam for a tasty side dish. Also called white mustard cabbage or pak choy.

This packet sows nine to sixteen 8-foot rows, depending on spacing.

When 4" tall, thin to 1 every 6"-10"


When to sow outside: 2 to 4 weeks before average last frost, and when soil temperature is 50º–80ºF. Temperatures below 50ºF can cause plants to bolt.

When to start inside: 4 to 6 weeks before average last frost; transplant after average last frost.

Harvesting: Harvest after about 8 weeks, or before yellow flowers begin to emerge from the center. Outer leaves can be picked much before that, leaving 2/3 of the plant's leaves to keep the plant growing. When harvesting baby bok choy, cut the entire head flush with the soil surface.
