Simple Salad Dressing

I love early summer when the garden is bursting with the first crops of veggies. Salad greens are one of the forerunners to summer’s bounty. Below is my simple salad dressing using basic pantry items and fresh herbs.

Quick Salad Dressing

Makes enough for two salads

Ingredients:
1 teaspoon Dijon Mustard
1 tablespoon vinegar (balsamic, white wine, rice wine or red wine)
3 tablespoons extra virgin olive oil
1 teaspoon sugar, or honey
1/2 teaspoon lemon zest
2 teaspoons lemon juice
2 teaspoons fresh herbs (parsley, sage, mint, thyme, basil), minced
1/2 teaspoon kosher salt
1/2 teaspoon black pepper

Place all the ingredients in a bowl and whisk until fully incorporated. Spoon over salad. Double the recipe to serve a crowd.
